摘要: 隨著全球化與食品科技的發展，食品安全風險愈加複雜，品質管制已成為食品相關科系的重要課程，目的在培育具備品質與管理能力的人才。然而，傳統教學以知識傳授為主，與產業實務脫節，導致學生面臨學用落差與職場適應困難。為減少落差，本研究旨在將PjBL (Project-based Learning)教學法導入品質管制課改變教學現場，在課程裡，學生接受真實世界的任務(提出案例水產品產品之品質改善策略)，教學設計主要分為五個階段，除了傳統知識授與外，學生需要應用跨域知識(食品科學/社會科學)，進行規劃及資料收集(公司訪談/消費者問卷調查)及建立品質屋，期間需要分工合作並進行口頭報告，提出案例產品改善品質措施。研究結果顯示，PjBL能有效增強學生的「辨識問題與訂定專業目標」、「科學能力」以及「信心與創意」三個面向，另外在口頭報告的高分組及低分組，都表示在「科學能力」方面的提升尤為顯著，顯示在不同程度的學生上皆可看出學習成效，總言之，學生解決真實場域問題，能夠提升自身的社會責任感，期望未來於場域產生更多正面的影響，並進入產業對食安及品質管理的領域更多的貢獻。&#xD;
With the advancement of globalization and food technology, food safety risks have become increasingly complex. Quality control has thus become a critical course in food-related academic programs, aiming to cultivate professionals with both quality assurance and management capabilities. However, traditional teaching methods focus primarily on knowledge transmission and are disconnected from industry practices, resulting in a gap between what students learn and what they need in the workplace, and making it difficult for them to adapt professionally. To bridge this gap, this study aims to introduce the Project-based Learning (PjBL) approach into the Food Quality Control curriculum to transform the teaching environment. In the course, students undertake real-world tasks—such as proposing quality improvement strategies for a case study involving seafood products. The instructional design is structured into five stages. In addition to acquiring traditional theoretical knowledge, students must apply interdisciplinary knowledge (from food science and social sciences), engage in project planning and data collection (e.g., company interviews and consumer surveys), and build a house of quality model. Throughout the process, students collaborate in teams, deliver oral presentations, and propose specific quality improvement measures for the case study product. The research findings show that PjBL effectively enhances students in three key areas: (1) identifying problems and setting professional goals, (2) scientific competency, and (3) confidence and creativity. Notably, both high- and low-scoring groups in the oral presentations reported significant improvement in scientific competency, indicating that the approach benefits students of varying abilities. In summary, by tackling real-world problems, students not only improve their sense of social responsibility but are also expected to generate more positive impacts in the field and contribute meaningfully to food safety and quality management within the industry.</summary>

    <title>以里海倡議為核心的永續發展課程及教學實踐研究</title>

    <summary type="text">標題: 以里海倡議為核心的永續發展課程及教學實踐研究

摘要: 人類在過往追求海洋經濟成長過程，因過度捕撈、經濟活動所產生的碳排放、廢棄物與塑膠造成海洋垃圾，以及各種海洋開發行為等，導致海洋環境破壞與生態系統退化，且在全球氣候變遷的威脅下，影響海洋經濟的永續發展與社會福祉。而里海倡議強調如何讓人類與海洋共存共生，促進海洋生態人文地景與社會生態系統平衡的概念，是海洋永續利用與發展的路徑之一。基此，計畫結合『海洋生態與經濟永續發展(科技)』與『海洋經濟學』課程，以及貢寮卯澳社區USR場域推行里海倡議，透過教室課程與場域交流互動，讓學生學習社會生態系統議題，透過田野調查社區議題，以及探索漁村文化和海女交流，瞭解社區永續所面臨的挑戰，同時構思永續發展策略，藉以提升學生海洋意識與社區認同。課程透過學生場域實作與期末里海實踐分享，提升學生對漁村社區永續發展的鏈結與解決問題的能力。其次，運用海洋意識量表與社區認同量表，評量學生對海洋意識與社區認同程度。另一方面，運用里海AHP問卷調查分析，讓學生瞭解里海實踐的關鍵因素，強化學生對理論實踐與學術研究能力。最後，課程透過場域實作，培植學生里海精神，同時落實大學社會責任，朝人海共生共融與漁村永續發展邁進。&#xD;
In the historical pursuit of marine economic growth, human activities such as overfishing, carbon emissions from economic operations, marine debris caused by waste and plastics, and various forms of marine development have resulted in the degradation of marine environments and ecosystems. These issues, compounded by the global threat of climate change, have further hindered the sustainable development of the marine economy and overall social well-being. The Satoumi initiative emphasizes the coexistence and symbiosis between humans and the ocean, promoting a balanced relationship among marine ecological, cultural, and socio-ecological systems. This concept offers a viable pathway toward the sustainable use and development of marine resources.&#xD;
&#xD;
Building upon this perspective, the project integrates the courses "Marine Ecology and Economic Sustainability (Science and Technology)" and "Marine Economics" with the Satoumi initiative implemented in the Mao'ao community in Gongliao through the University Social Responsibility (USR) program. By combining classroom instruction with field-based engagement, the program enables students to explore socio-ecological issues, conduct fieldwork on local challenges, and engage with traditional fishing village culture and sea women (ama), thereby deepening their understanding of community sustainability challenges and strategies for sustainable development. This experiential learning approach aims to enhance students’ ocean literacy and community identity.&#xD;
&#xD;
Through hands-on practice in the field and final presentations of their Satoumi actions, students strengthen their connection to the sustainable development of fishing communities and improve their problem-solving skills. In addition, the course employs the Ocean Literacy Scale and Community Identity Scale to assess students' levels of awareness and identification. Furthermore, by using the Analytic Hierarchy Process (AHP) questionnaire on Satoumi implementation, students gain insights into the key factors influencing practice, thereby reinforcing their theoretical and research competencies. Ultimately, through immersive fieldwork, the course cultivates students’ Satoumi values, fulfills the university’s social responsibility, and advances the vision of human-ocean coexistence and sustainable fishing village development.</summary>

    <summary type="text">標題: 再現茶港風華：地方知識共創與街區再造在課程之實踐

摘要: 深坑老街以其豆腐美食聞名全臺，但鮮少人知道的是，深坑在18世紀不僅是臺灣茶葉產地重鎮之一，更是北部茶葉運輸從陸運轉水運的樞紐（茶港）。基於計畫主持人考察地方社區實際問題，評估大學課程對實踐場域的需求，本研究計畫評估深坑待解決的問題是：為了厚植茶文化和凝聚社區共識，深坑需要重新透過知識共創的方式，建立茶葉文化的知識地圖。其次，在重塑茶鄉知識和歷史現場後，深坑需要透過社區培力機制、故事生活圈和復刻茶港歷史的途徑，累積社會資本和凝聚社區共識。同時，既有文獻存在以下缺口：對大學教育的行動研究，缺乏從知識共創和街區再造的角度，去探討大學專業課程對於社區營造的影響。準此，本兩年期研究計畫的目標及研究方法是：（一）從行動研究面向引導學生從建立地方知識地圖和故事創作兩種途徑，進行情境塑造及社區培力，並衡量學習者在五C關鍵能力的變遷情況；（二）引導大學生與社區居民共同進行故事創作、故事聚會和故事劇場，為深坑建立茶文化的知識地圖，以及在元宇宙復刻茶港歷史，實踐大學社會責任。&#xD;
Shenkeng Old Street is renowned for its tofu cuisine, but what few people may be aware of is that Shenkeng was not only a major tea producing town in Taiwan in the 18th century, but also a hub (tea port) for the transportation of tea from land to water in the northern Taiwan. Based on the principal investigator’s investigation of the actual issues in the local community and assessment of the needs of the university curriculum for the practice site, this research project has identified the pressing issues to be solved in Shenkeng: in order to cultivate tea culture and build community consensus, Shenkeng needs to re-establish a knowledge map of tea culture through knowledge co-creation. Furthermore, after reshaping the knowledge and history of this major tea-producing township, Shenkeng needs to accumulate social capital and build community consensus through community empowerment mechanisms, spotlight local stories, and restore its history as a major tea port. At the same time, the following gaps exist in the existing literature: the action research on university education lacks the exploration of the impact of university professional programs on community building from the perspective of knowledge co-creation and community regeneration. In light of the above, the objectives and research methods of this two-year research project are: (a) to guide students in situation shaping and community empowerment through the creation of local knowledge maps and storytelling, and to measure learners’ changes in the five core competencies from an action research perspective; (b) To guide university students and community residents to work together on story creation, story gathering and story theater, to build a knowledge map of tea culture for Shenkeng, as well as to recreate the history of tea port in the metaverse and to fulfill the university’s social responsibility.</summary>

    <title>以社會設計促進馬祖永續觀光：量體轉向與合作學習的行動研究</title>

    <summary type="text">標題: 以社會設計促進馬祖永續觀光：量體轉向與合作學習的行動研究

摘要: 馬祖的觀光活動受到季節及氣候因素影響甚鉅，且規劃及行銷人才不足。不過，馬祖轉型過程中的經濟與人口結構問題，也使得大學有進入社區提供解決方案的契機。為達成SDGs-8和SDGs-14的目標，本研究選擇馬祖（南竿鄉）做為研究場域，師生與社區居民共同設計和推動馬祖永續觀光。本研究以2年的期程，在「創意行銷企劃實務」課程（博雅課程）中建立「產學社行動者網絡」，帶領跨科系學生與社區居民共同為馬祖旅遊淡季設計主題旅遊行程/活動，並分析比較經由量體轉向與合作學習對於學生關鍵能力之影響。本計畫的成果包括：（一）教學成果：本計畫產出11個主題旅遊行程/活動、9支微電影及1組APP遊戲。計畫團隊也在馬祖辦理1場教學實踐研究計畫成果展。同時，本計畫成果更獲得《馬祖日報》四則報導，提升計畫的社會影響力。（二）研究成果：本計畫共計產出2篇國際研討會論文及1篇國內研討會論文。（三）學生學習：本研究發現經過合作學習和島嶼體驗學習，有助於提升跨科系團隊成員的批判、溝通、創造及問題解決能力。課程中融入海洋永續利用理念及到馬祖進行體驗學習，藉由提升地方認同感，有助於促進大學生在記憶、理解和創造的學習目標，並從多元角度提出永續觀光的解決方案。&#xD;

Tourism activities in Matsu are greatly affected by seasonal and climactic factors and there is a shortage of marketing and planning talent. Nevertheless, the economic and demographic problems during Matsu's transition also present an opportunity for universities to enter the community and provide solutions. In order to achieve the goals of SDGs-8 and SDGs-14, the Matsu Islands (Nangan Township) were chosen as the research sample for this study, and faculty and students worked together with community residents to design and promote Matsu as a sustainable tourism destination. This research project was carried out over a period of two years, aiming to establish the "Industry-Academia-Community Actor-Network" within the "Creative Marketing Planning Practice" course (Liberal Arts Curriculum) at the university. The goal is to lead interdisciplinary students and community residents in jointly designing themed travel itineraries/activities for off-season tourism in Matsu. The research also aims to analyze and compare the impact of the shift from traditional lecture-based teaching to cooperative learning on students' key competencies. Achievements of this project include: (1) Educational achievements: The project produced eleven thematic tour itineraries/activities, nine microfilms, and one mobile game. Project members also organized an achievement exhibition of MOE Teaching Practice Research Program in Matsu. The results of the project were featured in four articles in the Matsu Daily, increasing the project's social impact. (2) Research results: The project has produced two international and one domestic conference papers. (3) Student learning: this study found that collaborative learning and island-based experiential learning helped to enhance the critical, communication, creative and problem-solving competencies of interdisciplinary team members. The course incorporated the concept of sustainable use of the oceans and an experiential learning trip in Matsu. By enhancing the sense of local identity, it helps promote university students' learning objectives in memory, comprehension, and creativity. Additionally, it encourages them to propose sustainable tourism solutions from dynamic perspectives.</summary>
