Description

Abstract
龍膽石斑為國內新養殖的石斑魚種,但相關前處理、冷凍及加工方面的研究資料卻非常少,因此本研究擬定來探討石斑魚前處理及低溫凍藏時的鮮度變化,以確認最佳的凍藏之條件以及其後續加工鮮度指標。同時,開發新的石斑魚即食產品,完全官能品評分析,提供消費者更多樣的選擇。 Grouper has become a popular cultured fish species in Taiwan recently. The information of frozen storage condition for grouper is scanty. The aims of this study are to evaluate freshness indicator of groupers at different frozen storage condition and to develop an instant product of microwave food for grouper industry.
