Description

Abstract
石斑魚屬高蛋白質需求魚類,對蛋白質、碳水化合物及脂質的最適需求量分別為47、20及10%。魚粉是石斑魚飼料中主要的蛋白質來源。然而,隨著近年來海洋資源的銳減,魚粉價格逐年攀升,為使產業永續經營,同時降低飼料成本,以植物性蛋白取代魚粉一直是魚類營養學家努力的目標。有報告指出,外源性肉鹼可促進脂肪酸氧化以產生足夠的能量,增加動物體對非蛋白質能量物質的使用,進而節省動物體對胺基酸的消耗。在畜產飼料中添加肉鹼具有降低禽畜體脂、提高肌肉品質以及多項生理功能。更有報告指出,在美洲河鯰飼料中添加肉鹼,可增進脂質的蛋白質節約效果。本年度計畫擬以探討添加適量的肉鹼於石斑魚飼料中是否可以增加其對脂肪及植物性蛋白的利用,節約蛋白質,並減少脂肪在體內的蓄積以增強其對環境及疾病的耐受力。 The optimal supplementation levels of protein, carbohydrate and lipid for grouper (Epinephelus coioides) are 47, 20 and 10% respectively. The protein requirement is quite high. To keep the best growth, 37% fish meal protein in feed is necessary. However, the prices of fish meal increased recent years as a result of exhaustion of marine sources. In order to have a sustainable aquaculture industry and reduce feed cost, fish nutritionist works hard to find alternative plant protein. Studies show that supplementation of carnitine enhanced the oxidation of fatty acid to produce enough energy, thus, the level of protein used as energy was decreased. Dietary carnitine supplementation in terrestrial animal feeds can reduce the body lipid content, improve meat quality and increase utilization of lipid. Moreover, dietary carnitine supplementation in American catfish diets improved protein efficiency. This study is designed to find out whether dietary carnitine supplementation in grouper diets can improve the utilization of lipids and plant proteins, reduce the deposition of lipid, enhance environmental adaptability and increase disease resistance.
