目前市面上針對骨關節炎大多為使用免疫抑制劑、類固醇化合物及非類固醇化合物等，但大多治療骨關節炎之藥物都具有許多不良副作用。有許多臨床研究指出使用保留三股螺旋之二型膠原蛋白可以改善膝功能並防止關節軟骨的惡化。然而為了保存其蛋白質的三股螺旋及延長保存期限，目前都是以膠囊錠劑的方式銷售，但此種劑型不利於消化吸收。故欲開發出一款含有保留三股螺旋之二型膠原蛋白且無副作用之乳酸飲品，可以幫助預防關節軟骨之惡化的發生。本計畫欲以藍鯊軟骨作為原料並大量製備出具有三股螺旋之二型膠原蛋白，後續再利用 FTIR 測定官能基、利用流變儀測定黏度和利用 DSC 測定變性溫度，確認其功能特性並無改變。最後添加入乳酸飲品之中，製造出含有三股螺旋之二型膠原蛋白乳酸飲料。 However, in order to preserve the triple helix of its protein and extend its shelf-life, it is currently sold as capsules and tablets, but this dosage form is not conducive to digestion and absorption. Therefore, a beverage containing native type II collagen without side effects of medication can be developed to help prevent the deterioration of articular cartilage. The plan is to use blue shark cartilage as a raw material and assist the food industry in the large-scale production of type II collagen with the triple helix. Further, to ensure the functional characteristics of native type II collagen, the functional group, viscosity and denatured temperature of collagen are needed to analyses. Finally, it is added to the lactic acid drink to produce a type II collagen lactic acid drink containing the triple helix of protein.
