Description

Abstract
利用熱水抽出後剩餘的蜆肉為原料,以多種蛋白酶進行水解製得水解物,其中以具有生理活性的胜肽物質為主。此胜肽具有與膽酸的結合能力,可降低血中膽固醇的含量。因此,本研究擬探討不同蛋白酶與水解條件製得的水解物對膽酸的結合能力與降膽固醇的效果。此水解物預期可開發為一種對高膽固醇血症患者用之降膽固醇的保健食品。 The muscle of golden freshwater clam was extracted using hot water. The residual meat was hydrolyzed to produce hydrolysates, which contain bioactive peptides. These peptides could bind bile acids then reduce the cholesterol in the blood. Therefore, the purpose of this study will investigate the effects of protease and hydrolysis condition on bile-acid binding capacity and cholesterol-reducing effect of hydrolysates. The hydrolysate will be developed to be healthy food as a cholesterol- reducing agent for hypercholesterolemic patients.
