Description

Abstract
"海藻富含碳水化合物、蛋白質、礦物質等,然而除了少數直接供人們鮮食或經簡單加工供人食用 外,台灣所產海藻大多數供作飼料用,經濟價值低。近年研究顯示海藻具有降血脂、降血壓、保肝、 免疫調節等多種功效。紫菜具抗突變性、抗氧化、抗腫瘤、及抗紫外線傷害等活性。石蓴具抗氧化、 保肝、降血脂等活性。目前釀酒原料主要為穀物及水果,甚少有人開發海藻酒。本研究室已建立紫菜 酒及石蓴酒之生產技術,所得海藻酒風味良好,且具良好抗氧化活性,可避免酒精對動物所造成之傷 害。海藻酒釀造之廢棄物—海藻酒粕由於含有未分解之海藻成份及酵母菌,推測具有抗氧化、抗腫瘤、 抗老化及抑制黑色素形成等活性。本計畫擬探討紫菜酒粕與石蓴酒粕的生理活性,包括抗氧化活性、 刺激細胞增生能力、抑制黑色素形成能力及抗紫外線活性。預期海藻酒粕由於有此等活性,可成為保 健食品及化妝品之素材,有效增加海藻應用於酒類產品之可行性。" "Seaweeds are rich in carbohydrates, proteins and minerals. Except few of them freshly consumed or being processed for human consumption, most seaweeds produced in Taiwan are mainly used as feeds in aquaculture. Recently, several reports mentioned that seaweeds have health-related functions including anti-oxidative, anti-hyperlipidemic, anti-hyperbloodpressure, immune modulation activities and preventing liver damage. Porphyra spp., an edible red algae, has been shown to have the activities of anti-oxidation, anti-mutagenicity, anti-cancer and anti-UV. Ulva spp., an edible green algae, has been demonstrated to have the activities of anti-oxidative, anti-hyperlipidemia and liver protection. Raw materials for wine making in the world now are mainly from crops and fruits. Little seaweeds are used for wine making. We have established the production techniques for Porphyra wine and Ulva wine making. These two seaweed wines have good flavors and strong anti-oxidative activity. Data from animal oral feeding of these 2 wine have demonstrated that they can affectively prevent the ethanol damages on animal during consumption of seaweed wines. Seaweed spents, the residues from seaweed wine making, may also have the activities of anti-oxidation, anti-cancer, anti-aging, inhibition of melanin formation, due to the presence of the active components from yeasts and un-digested seaweed. The aims of this project are to investigate the activities of anti-oxidation, induction of cell profiliferation, anti-UV and inhibition of melanin formation. Due to the multiple bioactivities, the seaweed spents may has potential in application in healthy food or cosmetics."
