Description

Abstract
"老人常見營養不良問題包括蛋白質-熱量營養不良、 缺鐵性貧血、體重過輕或 肥胖、 維他命或礦物質不平衡。我國銀髮族罹患慢性病比例達81%。如何開發高 蛋白及高膳食纖維、且具多功能性食品,尤其是預防認知退化食品,是近年來極受 重視的課題。 紅藜 (Chenopodium formosanum)為台灣原住民糧食作物,含豐富膳食纖維與礦 物質,所含甜菜素具抗氧化及保肝活性。靈芝多醣(鍵結)具抗腫瘤、免疫調節、 抗氧化等功能。靈芝三萜類具有抗發炎、抗腫瘤、及抑制acetylcholinesterase 等活性;固態培養靈芝菌絲體所產之γ-胺基丁酸(GABA)具降血壓、抗憂鬱、改善 癲癇、帕金森氏和阿茲海默症等功能。 本計畫將選取米、紅藜及其他高蛋白作物配方為發酵原料,固態培養靈芝。利 用靈芝分泌澱粉酶、蛋白酶於原料中,將大分子物質分解成較小分子,有助老年人 消化與吸收。另由於靈芝菌絲體生長,及其所生產靈芝多醣、胜肽及GABA 等,使 最終產品具有降血壓、免疫調節、抗氧化及抗發炎等多種功能活性。第一年將建立 發酵原料配方及靈芝培養條件,以達到含有酵素、高膳食纖維及蛋白含量且適口性 佳之多功能性營養食品。第二年比較發酵產品及未發酵原料之組成份、活性成份、 消化吸收率、免疫活性、抗氧化及抗發炎活性,以確認產品特性。" "The mal-nutritional problems in the elderly include protein-energy malnutrition, iron deficiency anemia, underweight or obesity, and vitamin or mineral imbalance. The proportion of the elderly suffering from chronic diseases in Taiwan is 81%. It is a big issue to develop the multifunctional foods with contents of high protein and dietary fiber for the elderly, especially the functional food to prevent the decline of cognition. Djulis (Chenopodium formosanum), a native cereal in Taiwan, is abundant in dietary fiber and minerals. It contains betanin active substance that has strong antioxidant activity and liver protective effect. The polysaccharides from Ganoderma lucidum have been demonstrated to have various bioactivities including antitumor, immune modulation, and antioxidant activities. Triterpenoids from G. lucidum fruiting body have various bioactivities including anti-inflammatory, antitumor, and inhibition in acetylcholinesterase activity. γ-Aminobutyric acid (GABA), produced by solid-state cultivation of G. lucidum mycelia, is well known to have bioactivities of hypopressure, anti-depression, improvement of epilepsy, Parkinson and Alzheimer’s diseases. The aims of this project are to formulation of various cereals including rice, Djulis, and other cereals with high protein content for the solid-state cultivation of G. lucidum mycelia to produce a multi-functional nutritional food with high contents of protein and dietary fiber for the elderly. G. lucidum will secrete amylase and proteinases in medium to degrade the larger molecules of proteins and starch in raw materials to become smaller molecules in the product, which favors the digestion and absorption by the elderly. The presence of G. lucidum mycelia, and the bioactive substances of Ganoderma polysaccharides, peptides and GABA produced by G. lucidum will contribute the multiple bioactivities of hypopressure, immune modulation, anti-oxidation and anti-inflammation. In the first year of this project the formulation of the substrate, the combination of cultures and the cultivation conditions for G. lucidum will be established to produce the multifunctional nutritional food with high contents of protein and dietary fiber, and with high digestion and absorption percentage by the elderly. In the second year of this project the analyses of the proximate composition, the active components, the digestion and absorption efficacy, and the bioactivities of immune modulation, anti-oxidation and anti-inflammation will be carried out for the unfermented raw materials and the fermented product."
