Abstract
海洋生物毒中之河魨毒和麻痺性貝毒造成台灣地區多起之食物中毒案例,在國科會經費之支援下,計畫成果得知台灣有毒魚介類包含河魨類、玉螺類、織紋螺類、 法螺、台灣鳳螺、岩螺及扁蟹類、海星… 等,並完成其毒成分、毒化來源及部分全年毒性資料。目前已知台灣麻痺性貝毒之 來源為有毒渦鞭毛藻 Alexandrium minutum,本研究室對其毒性與毒成分有完整之探討,並已建立其最適生長與產毒之 條件因子。為確保市售螺貝類之食用安全性並了解其蓄毒機制,本研究一方面採集五種食用二枚貝,餵食毒藻 A. minutum, 發現其對毒藻之耐受性以西施舌貝與淡菜 最強,另以各貝類對毒藻耐受性之閥值量長期餵食各貝類,發現僅西施舌貝蓄毒, 其餘貝類均不蓄毒。另一方面,由於嘉義地區曾發生食用玉螺之中毒事件,本研究除分析中毒檢體外,亦定時採集此地區相當普遍之兩種螺類 Polinices didyma 與 Natica lineata,發現中毒檢體 P .didyma 之至毒物質為河魨毒,平均毒性為 118±105 MU/g specimen;在全年資料中,P .didyma 與 N. lineata 之有毒個體比例分別為 12.5% 與 29%,平均毒性分別為 47±28.3 MU/g specimen 與 21.8±13.8 MU/g specimen,毒性物質均為河魨毒,其毒性皆以可食部位大於中腸腺,另其毒性之季節變化亦有探討。此外,北台灣最近發生之漁工食用螺類中毒事件,經本研究室分析證實為含河魨毒之織紋螺 Zeuxis sufflatus 與 Natica clathrata ,其毒性值為 345-1640 MU/ specimen 與 116-643 MU/ specimen。Marine toxins, especially tetrodotoxin (TTX) and paralytic shellfish poisons (PSPs), have caused lots of food incidents in Taiwan. 1 The toxicological studies on puffer, xanthid crab, carnivorous gastropods, and starfish have been conducted in our laboratory. It is elucidated that one of the sources of PSP in Taiwan is the dinoflagellate Alexandrium minutum. We have also studied on the dynamic of the growth and toxin production of A. minutum. To ensure that foods were not intoxified by PSP and to elucidate the toxification mechanism, five species of the main edible bivalves were collected and examined for susceptibility to A. minutum. It was found that purple clam Soletellina diphops had the strongest resistibility to A. minutum. Feeding the threshold level of A. minutum to five bivalves for a long period, only purple clam showed toxicity. On the other hand, the responsible toxins in the gastropod Polinices didyma, which caused food poisoning incidents in Chiayi Country, was elucidated to be TTX and the average toxicity was 118±105 MU/g specimen. We also investigated that the frequency of the toxic alive specimens of P. didyma and Natica lineata during the year were 12.5% and 29%, respectively. The average toxicities were 47±28.3 MU/g specimen and 21.8±13.8 MU/g specimen. The toxic agents were both TTX. The seasonal variations of toxicity in these two gastropods were investigated, too. Besides, another food poisoning caused by snails, which were collected from the coastal areas at Kingsan, was analyzed. The toxic snails were identified to be Zeuxis sufflatus and Natica clathrata and contained TTX. The average toxicities were 345-1640 MU/ specimen and 116-643 MU/ specimen.
