Description

Abstract
由安氏試驗與動物試驗評估EO water處理生鮮鮪魚肉之安全性,經過含有50與100 ppm有效餘氯濃度之EO water分別作用5和10分鐘鮪肉之水溶性和油溶性試樣,對未添加與添加S9 mixture下之Salmonella typhimurium TA98和S. typhimurium TA100,均不會造成變異性。動物試驗餵食條件含未經100 ppm有效餘氯處理10分鐘之鮪肉配合顆粒飼料、經100 ppm有效餘氯處理10分鐘之鮪肉配合顆粒飼料與正常顆粒飼料組分別進行SD大白鼠8週餵食試驗,比較其攝食量,發現並無差異,攝食量平均為383±27.3 g/day/kg。臨床生化指標與組織切片圖顯示,經EO water處理後之鮪肉經由攝食不會有毒性產生。 The purpose of this project is to realize food safety of tuna meats treated with electrolyzed oxidizing water. Cubic meats of yellow-fin tuna (Thunnus albacares) were treated with electrolyzed oxidizing (EO) water containing 50 and 100 mg/L free chlorine for 5 and 10 min, and oil-soluble and water-soluble extracts of the treated tuna cubes were checked for mutagenicity using Ames Salmonella typhimurium /microsome mutagenicity assay. No mutagenic activity was detected in the treated tuna samples with EO water toward TA98 or TA100. In the animal study, the SD rats were fed different diets with and without tuna meats treated with EO water for 8 weeks. It indicated that tuna meats treated with EO water showed no harmful effects on the growth and functions of liver and kidney in the rats. Serum HDL-C, triglyceride and total cholesterol were similar in all groups. However, the rats fed tuna meats could reduce the level of LDL-C in the plasma of rats.
