幾丁質類之利用漸受各國重視,其一幾丁聚醣已被做為機能性食品,由於幾丁聚醣之去乙醯度因產品而異,低去乙醯度之幾丁聚醣,可食用範圍為5%以下,且稍具有降解重金屬銅毒害之作用,為知高去醯度幾丁聚醣之食用安全性,及其降解重金屬銅毒害之效果,乃以去乙醯度為92%之幾丁聚醣,以0,1.0,2.5,5.0和10.0%之量添加入大鼠飼料中,經餵食大鼠八週,檢測大鼠成長、血液和肝臟之生化指標,顯示高去醯度之幾丁聚醣,其食用安全添加量應在2.5%以下,而且高度去醯度(92%)之幾丁聚醣,其對生物體之傷害較低去乙醯度者(45%)為大。另檢測高去乙醯度(92%)之幾丁聚醣對重金屬銅在大鼠毒害作用之影響,發現並無降解效果,反而會加重銅在生物之毒作用。 Recently, the applications of chitinous products have been developed in many countries. One of them is used as healthy food or food additive. To certify the edible safety of chitinous products for human, the animal test was then carried out. The male Wistar rats were fed diets with different levels (0-10%) of highly deacetylated (92%) (HDC) for 8 weeks. The results indicated that edible safety limit of HDC was below 2.5%. Except 10% HDC group, all of tested groups, HDC showed no harmful effects on the growth. Two groupers fed diets with more than 5% HDC exhibited to increase the level of AST and ALT in the rats. On the other hand, chitosan is often used as a coagulant or chelating agent to clear out heavy metals. This prompted us to study the effect of HDC on the toxicity of copper in male Wistar rats. After feeding diet with 500ppm copper and 5% HDC at the same time, chitosan could not act any positive effect to decrease the toxicity of copper in the rats. On the contrary, HDC showed additive effect on the toxicity of copper in the rats.
