Description

Abstract
本計畫利用添加有機酸、幾丁聚醣樣品、非加熱加工處理方式建立果汁中新穎殺菌方法,其中將確認其處理方法最佳條件,並利用市售濃縮還原果汁來評估其儲存試驗。預期可以利用此方法減少腐敗菌於果汁中生成問題,同時減少因加熱技術所造成營養成份之喪失,因此生產高附加價值之果汁產品。
