Description

Abstract

這計畫以TMT定量蛋白質體學探討電解水處理導致李斯特菌進入VBNC及重新復活後菌體的生成機制以及後續引起輕度加工水產品食品中毒的威脅性。釐清VBNC及重新復活後的菌體於水產品冷藏物流期間是否仍維持該生理特性，而導致危害食品安全的疑慮以及提供相關因應措施。
