Description

Abstract
本計畫擬建立微酸性電解水誘導李斯特菌進入 VBNC 模式(低有效氯濃度),及被人工污染台灣鯛的VBNC李斯特菌模式(高有效氯濃度)。後續利用無標記定量蛋白質體學探究出微酸性電解水對菌體進入 VBNC 狀態下的完整蛋白質網絡,用以預防冷藏水產品中VBNC李斯特菌導致的潛在食安風險。
