Description

Abstract
抗生素的抗藥性被世界衛生組織列為目前全球在人類健康及食品安全上最大的挑戰之一。抗生素抗藥性影響的層面相當深遠,從各國家至各年齡層的人類都可能受到影響。除了可能導致更長的住院時間及更高的醫療費用,也可能伴隨著更高的死亡率。美國疾病管制與預防中心指出食品及動物是人類接觸抗藥性微生物的主要來源之一,而加強大眾及食品相關從業人員對抗藥性食源性微生物的認知為一個有效防治抗藥性食源性微生物的途徑。然而,國內針對抗藥性食源性病原菌的研究仍然不足,食品及食品相關從業人員取得抗藥性病原菌相關知識的管道缺乏,為了有效防治抗藥性病原菌的問題,宜推廣相關知識及擬定防治長期策略,從建立臺灣抗藥性食源性微生物的科學可靠研究數據,加強食品相關從業人員的基本認知及防護策略,以減少抗藥性病原菌對臺灣民眾及環境的風險及負擔。本計畫旨在建立「食品中對殺菌物質具抗性微生物」之行動策略規劃,並完成以「對殺菌物質具抗性之微生物」為主題並美編設計過後的知識文章及中英文文案,並召開專家會議討論行動策略規劃、文章及文案。另一方面,本計畫利用風險分級矩陣方法瞭解不同食品中何種抗生素需優先進行關注,並擬採樣水產品、家禽及家畜共21項食品樣品,並以次世代定序分析樣品中微生物菌叢,後以篩選性培養基分離食品中需關注的微生物並鑑定;再用培養液稀釋法評估其對於需優先關注之抗生素的抗藥性。 Antibiotic resistance is recognized by the World Health Organization as one of the biggest challenges to human health and food safety in the world. The impact of antibiotic resistance is far-reaching, and humans at all ages from all countries may be affected. In addition to longer hospitalization and higher medical costs, antibiotic resistance may cause higher mortality. The U.S. Centers for Disease Control and Prevention pointed out that food and animals are one of the main sources of human exposure to drug-resistant microorganisms. To enhance the public and food industry employees’ awareness of drug-resistant food-borne microorganisms is an effective way to prevent and control drug-resistant food-borne microorganisms. However, domestic research on drug-resistant food-borne pathogens is still insufficient, and food industry employees lack access to knowledge about drug-resistant pathogens. In order to effectively prevent and control drug-resistant pathogens, relevant knowledge should be promoted and long-term strategies should be formulated. From the establishment of scientific and reliable research data on drug-resistant food-borne microorganisms in Taiwan, the basic cognition and protection strategies of food-related practitioners are strengthened to reduce the risk and burden of drug-resistant pathogens to Taiwanese people and the environment. This project aims to establish an action strategy plan for "microorganisms resistant to antimicrobial substances in food", and to complete a knowledge article and Chinese and English copywriting for this topic. Expert meetings will be held to discuss strategic planning, articles and copywriting. On the other hand, we use the risk grading matrix method to understand which antibiotics in different foods should be given priority attention, and plan to sample 21 food samples of aquatic products, poultry and livestock, and analyze the microbial bacteria distribution by Next Generation Sequencing. We will further use selective media to isolate and identify the microorganisms that need surveillance for drug resistance in food, and use broth dilution method to evaluate their resistance to the antibiotics that require priority attention.
