Description

Abstract
香料產業屬於高單價、高附加價值產業,以台灣豐富飲食文化以及深厚食品加工技術基礎,極適合我國作為重點發展的食品產業。以半胱氨酸結合β-裂解酶製備含硫香氣化合物,除了可探討酵素轉化多種結構基質的可能機制,也將逐步擴大建構以微生物酵素轉化製備符合天然的含硫香氣化合物之生物轉化平台。
