Description

Abstract
學術發展上可建立高靜水壓加工技術輔助酵素萃取藍鯊魚皮發酵物,分析水解物對體外與體內調節血壓及膽固醇的效果,並鑑定其有效的胜肽序列與探討其作用機制。本計畫可建立藍鯊魚水解過程中商業酵素之動力學與二級結構的變化;另外亦可建立工業生產所需之熱穿透之最適殺菌值,有助於提供食品產業實質的酵素水解參數與最適加工條件,亦可將建立之殺菌值作為協助產業瞭解相關產品之熱穿透數據的參考資料。在社會上可作為預防醫學的保健食品並減少心血管疾病的罹患機率。在經濟上,利用藍鯊魚皮搭配乳酸菌發酵以及高靜水壓加工技術可以保留原料的營養外並提高活性胜肽的萃取率,從而開發成調節血壓血脂的藍鯊魚精,進一步提高藍鯊魚皮的商業經濟價值。
