The Department of Aquatic Food Science, established in 1948, offers undergraduate, evening, master's, and in-service master's programs. With strong faculty and advanced facilities, it provides comprehensive training in food technology. The curriculum focuses on food safety, analysis, processing, and functional health foods. Undergraduate courses emphasize both theory and practice, while graduate programs foster independent research and logical thinking, cultivating talent in technology, research, and management within the food industry. The department's curriculum and internships focus on aquatic food science, emphasizing both theory and practice. Students gain expertise in food processing, refrigeration, safety testing, biochemical analysis, biotechnology, and food business management. Diverse elective courses allow specialization in processing, R&D, quality control, management, and marketing. To align with global trends and national development, the curriculum integrates biotechnology, mechatronics, industrial automation, HACCP, and a second foreign language. The department also collaborates with the food industry through its Inspection and Processing Service Centers, providing professional support and industry-academia cooperation. The department is equipped with comprehensive processing facilities, including canning, freezing, dried food, and fish paste production plants, along with various training factories. It also features advanced instruments for food science and biotechnology, such as spectrophotometers, colorimeters, gas and high- performance liquid chromatographs, atomic absorption spectrometers, ion chromatographs, ultracentrifuges, high-performance microscopes, electron microscopes, texture analyzers, ultrasonic homogenizers, rheometers, and fraction collectors. Our faculty actively engage in research and academic activities while organizing food inspection training and HACCP workshops to help the seafood processing industry establish quality management systems. The department also promotes student career placement, supporting the development of the aquaculture and food processing industries in the Kaohsiung-Pingtung region, working together for the future of the aquatic food industry.
