Abstract

香料產業屬於高單價、高附加價值產業，以台灣豐富飲食文化以及深厚食品加工技術基礎，極適合我國作為食品供應鏈中重點發展的產業。以微生物碳-硫β-裂解酶製備香氣物質(R) and (S)3-硫烷基己-1-醇，能有助於食品中含硫香氣化合物成分的提升及製備，並逐步擴大建構以微生物及酵素轉化製備符合天然的含硫香氣化合物製備路徑。
