Keywords: | 麻痺性具毒;西施舌貝;毒成分;Paralytic Shellfish Poison;Purple Clam;Toxin Composition | Issue Date: | 1990 | Publisher: | Journal of the Fisheries Society of Taiwan | Journal Volume: | 17 | Journal Issue: | 4 | Start page/Pages: | pp.305-311 | Abstract: | 本試驗先以驅氧的營養肉汁研究硫化氫產生菌的硫化氫產生能力。然後將加種此等硫化氫產生菌的鱰魚塊浸泡於0.5~2%醋酸、0.5~2%椐椽酸、或0.5%聚合磷酸鹽溶液中15分鐘後,取出封入三種不同的氣體,並於4℃貯存14天。結果發現,封於氮氣或混合氣(0.5%O2,10%CO2及89.5%N2)的鱰魚塊不產生綠變;但對於空氣中的,除浸泡過1~2%醋酸者外,均產生綠變。那些自然污染細菌的鱰魚塊,在-20℃凍藏一年後,品質並未發生明顯的變化。凍藏似會顯著的降低硫化氫產生菌的活性。而且在凍藏前若未綠變,縱使未浸過酸液的鱰魚塊,在凍藏一年後亦不產生綠變。 |
