Description

Abstract
為了解不同蛋白質來源與膽固醇添加與否對血壓及血脂質的影響,以原發性高血壓大白鼠為實驗動物,並將動物分為6組,分別是(a)酪蛋白, CA組; (b)大豆分離蛋白, SPI組; (c)脫脂鯖魚肉, NM組; (d) 酪蛋白+膽固醇, CAC組; (e) 大豆分離蛋白+膽固醇, SPIC組; (f) 脫脂鯖魚肉+膽固醇, NMC組。實驗共進行9週,實驗期間採自由飲水攝食。在飲水方面,提供蒸餾水與0.5 %食鹽水,以進行飲水嗜好性實驗。實驗結果發現,在膽固醇添加組?堙A脫脂鯖魚肉組與大豆分離蛋白組都有較低的收縮壓。此外,脫脂鯖魚肉會明顯降低血漿總膽固醇、三酸甘油酯、磷脂質及葡萄糖濃度。在膽固醇不添加組?堙A脫脂鯖魚肉組與大豆分離蛋白組都有較低的收縮壓,然而只有大豆分離蛋白會明顯降低血漿總膽固醇及磷脂質濃度。值得注意的是,酪蛋白+膽固醇組有較高收縮壓,而對食鹽水嗜好性也是6組中最高的。比較CA組與CAC組發現,膽固醇的添加會明顯增加血漿總膽固醇與收縮壓。綜合以上結果推測,不同蛋白質來源與膽固醇添加對原發性高血壓大白鼠血壓及血脂質的調節上可能扮演重要的角色。 To investigate the effect of dietary different protein source and cholesterol on systolic blood pressure and plasma lipids, male spontaneously hypertensive rats (SHR) were used as animal model and divided into 6 groups, (a) Casein; CA group (b) Soy protein isolate; SPI group (c) Non-fat mackerel meat; NM group (d) Casein + cholesterol; CAC group (e) Soy protein isolate + cholesterol; SPIC group (f) No-fat mackerel meat + cholesterol; NMC group. Fresh diet and drinking water were fed to rats ad libitum for 9 weeks. The drinking water including distilled water and 0.5 % NaCl solution is supplied by free choice preference. In cholesterol supplement groups, lower systolic blood pressure was observed in SPIC group and NMC group. Significantly decreased plasma total cholesterol, triglyceride, phospholipid and glucose concentration were observed in NMC group. In cholesterol free groups, rats fed the SPI diet or non-fat mackerel meat had lower systolic blood pressure when compared with those fed the casein diet. In addition, significantly decreased plasma total cholesterol and phospholipid concentrations were observed in SPI group. It is interesting to note that higher systolic blood pressure associated with high salt drinking volume were observed in CAC group. A significant difference in systolic blood pressure and plasma total cholesterol level was observed between CA group and CAC group. Cholesterol supplement significantly increased blood pressure and plasma total cholesterol level. Results from this study suggest that dietary cholesterol and difference may play a role in regulation of plasma lipids and blood pressure in SHR rats.
