Description

Abstract
食品用洗潔劑在『食品安全衛生管理法』中之定義,指用於消毒或洗滌食品、食品器具、食品容器或包裝之物質。為有效管理該等食品用洗潔劑所使用之清潔消毒成分及其使用安全性,衛生福利部今年已預告修正「食品用洗潔劑衛生標準」草案。增訂可用於食品器具、容器及包裝等食品接觸面或食品之洗滌或消毒成分及其使用規定。目前市面上的食品用洗潔劑品牌眾多,標示中常見標榜「抗菌」、「制菌」等宣稱,此類抗菌、抑菌成份於食品用洗潔劑中之角色值得探討。本計畫的目的擬針對宣稱「抗菌」、「制菌」之食品用洗潔劑(消毒)進行微生物分析,以了解食品用洗潔劑產品在儲藏期間是否有細菌污染問題,以及一般洗碗精和抗菌用洗碗精對已污染餐盤之去污消毒能力,來釐清抗菌劑使用的必要性。另外,輔導製造業者根據「食品良好衛生規範準則」進行操作,編輯食品用洗潔劑正確使用手冊,透過管理宣導或相關會議活動,建立政府與業者和民眾在食品用洗潔劑之衛生安全法規與風險溝通之平台,本計畫彙整所得之研究結果以提供作為管理規範研擬之參考。 "Food detergents are defined as the substances used for cleaning or sanitizing food itself, food contact surfaces including containers and packages according to “Act of Governing Food Sanitation”. For a better management on food detergents, the Ministry of Health and Welfare, ROC has announced “Sanitation for Food Detergent” Draft this year. It declares some approved chemical composition and their regulation limit level for food detergents. Antibacterial food detergents are nowadays popular in the market but still lack of their safety and effectiveness information. The aims of this project are as follows: 1. Evaluate the safety and stability of food detergents under 9 month open-condition storage 2. Compare the decontaminating abilities between plain and antibacterial dishwashing liquids 3. Provide food detergent industry guidance to promote them reach Good Hygiene Practices program 4. Edit a manual specific for antibacterial food detergents 5. Organize 3 open educational training program to the general public 6. Form a special forum to integrate comments and suggestions by experts from governmental agencies, academy, and manufactures All above results will initiate a proposal for better management of food detergent manufacturing in the future. "
