建立以魚市場為中心之魚貨追蹤示範系統，將有助於政府主管機關對於水產品安全狀況之掌握，縱使有偶發的水產品安全報導，也能夠藉由本系統立即追蹤問題魚貨來源，區隔安全水產品，將消費者對於水產品安全的疑慮降至最低可能。同時，針對同一魚種在全國各地魚市場不同俗名稱呼的現況，也要討論建立一個魚名同義詞的資料庫，以便資料庫的作業管理。對於水產品流通過程微生物與衛生品質的持續監測，並探討建立營銷過程異常水產品之可追溯性管理制度。監測之品質指標包括病源菌、微生物及魚體自家消化代謝產物如生物胺類與甲醛等。 The aims of this porject are, fitst to study the feasibility of establishing a traceability system from fish auction market. Information regarding to seafood suppliers, buyers, species and quality attributes will be included into the system that will allow the seafood can be traced from its origin, distribution channels, middlemen and retailers. Secondly, to develop a fish common name symnomus data bank, that will allow same fish with different common names across different fish markets to come to an unified naming system to make the traceability system working properly. Seafood quality monitoring program will be focused on pathogenic microbes, biogenic amines and formaldehyde. The results will be used to establish a system that makes the un-sanitary seafood products traceable to their suppliers.
