Description

Abstract
以鯖柴魚粉末作為原料,利用商用蛋白脢水解後,將水解液利用噴霧乾燥法製成粉末。因此,本研究擬探討水解處理與噴霧乾燥條件對粉末化產品保健機能特性的影響,及建立產品商品化時的最適加工條件。同時,將此粉末開發成商品化錠狀、膠囊狀與飲液狀,且為具有降高血壓的水產保健食品。 The dried mackerel powder will be used as material to prepare hydrolysates with commercial protease. Then, the powder will be produced from hydrolysates by spray drying. Therefore, the purpose of this study will investigate the effects of hydrolysis treatments and conditions of spray drying on functional properties of commercial powered product, and establish its optimal process conditions. Also, commercial tablet, capsule and drink type of fishery health foods have antihypertensive effect will be developed.
