Description

Abstract
以龍鬚菜為原料,利用冷風乾燥後,將其研磨成粉末狀。再以加熱水煮方式,將其中水可溶性的多醣體溶出並與水不可溶的膳食纖維完全利用,而開發為一種可食性的膜(包材)。因此,本研究擬探討不同加工條件(水煮溫度、膜乾燥溫度)對可食膜物性與品質的影響。此膜(包材)的用途可作為多種口味的壽司類飯糰的外包材與調配口味多樣化的休閒片狀食品(如海苔片)。 Gacilaria will be used as material and milled into powder after cold water dried. The soluble polysaccharides will be extracted from powder by hot water cooking then utilized completely with insoluble fiber to develop one of edible film. Therefore, the purpose of this study will investigate the effects of cooking temperature of algae and drying temperature of film on physical properties and quality of edible film from Gacilaria. The edible film may be used as package film for Sushi or versatile taste for Nori film.
