Description

Abstract
將針對EO water處理水產品之安全性與可行性做一探,瞭解不同濃度、時間酸性電解水生成消毒副產物量之相關性,建立酸性電解水在食品處理上之食用安全性,並瞭解酸性電解水處理水產品的化學致突變可能性,來評估以酸性電解水替代傳統氯系殺菌劑於食品方面消毒處理之可能性。 The aims of study focus on evaluating food safety of fish products processed with EO water. Seafood will be processed with different concentration of EO water for various exposure times. The mutation test and chronic toxicity of processed seafood will be furthers conducted to examine the dietary safety. Judging from the achievements of mutation that and chronic toxicity test, the application of EO water on the fish product processing will be evaluated. Meanwhile, the seafood safety could be further guaranteed.
