Description

Abstract
幾丁質類之利用漸受各國重視,其一幾丁聚醣已被做為機能性食品,由於幾丁聚醣之製造中,有單體葡萄糖胺殘留,為知葡萄糖胺之食用安全性,乃以0、1.0、2.5、5.0和10.0%之葡萄糖胺量添加入大鼠飼料中,經餵食大鼠八週,檢測大鼠成長、血液和肝臟之生化指標,顯示葡萄糖胺之食用安全添加量,若以不影響血液特性和肝腎功能指標之劑量為1%以下。若以成長為指標,則即使添加10%量亦不造成不良影響。但因老鼠即使餵食1%之葡萄糖胺,其外觀行動顯現遲鈍,因此葡萄糖胺之食用安全性,乃須進一步考量。 Recently, the applications of chitinous products have been developed in many countries. One of them is used as healthy food or food additive. To certify the edible safety of chitinous products for human, the aminal test was then carried out. The male Wistar rats were fed diets with different levels (0-10%) of glucosamine for 8 weeks. The results indicated that glucosamine showed no harmful effects on the growth. But judging from the characteristics of blood and indicators of liver and kidney functions in the rats, the edible safety limit of glucosamine was below 1.0%. However, the glucosamine reduced the behaviour activity of rats, the edible safety of glucosamine should be further studied.
