蝦蟹類和魷魚這為我國重要的水產品，在利用時會產大量廢棄物，而幾丁質為其中重要的成分，若能將幾丁質純化出來善加利用，除了可解決廢棄物的問題外，尚能創造產業的新價值。目前生產幾丁質的方法，對環境不友善，若改用本計畫擬建立的方法「以天然深共熔溶劑和物理性處理從蝦蟹殼和魷魚軟骨製備幾丁質」，為一兼顧產品品質、生產效率和環保的方法，在環保要求較高的國家，如臺灣，就可以利用這些水產廢棄物，促進漁業、漁業、水產業、食品、生醫材料等相關產業的發展。符合聯合國永續發展目標。研究成果可撰寫專利、發表於學術期刊或研討會。參與人員可獲得實驗設計、邏輯思考、精密儀器的訓練和經驗。
