Description

Abstract
紫菜聚醣酶可特異性裂解紫菜聚醣 G 和L6S 單元之間的 β-1,4 糖苷鍵,生產紫菜寡醣。紫菜寡醣相較於紫菜聚醣,具較佳的自由基清除、抗氧化及抗癌等生理活性,且溶解度與穩定性皆較高。熱穩定性提昇之酵素可以在較高溫下進行催化反應,具有降低高濃度反應液黏度且防止微生物汙染的優勢,也有利於酵素在工業化應用時的重複使用。使用熱穩定性提昇之紫菜聚醣酶生產紫菜寡醣,進而降低生產成本,紫菜寡醣價格大幅降低後,預期能增加紫菜寡醣在各方面的應用,有效地預防及控制疾病。
