Description

Abstract

目前還沒有關於鹼水洗及短波紅外線乾燥的次數對於石花菜凍質地以及色澤有何影響的綜合研究，對於使用短波紅外線燈處理乾燥食品的研究也較少，因此本研究想使用短波紅外線及鹼水浸泡水洗來取代鹵素燈曝曬，以期能減少曝曬及水洗的次數，但同時還能達到與傳統「七曝七曬」相同的效果；另外也探討七曝七曬及鹼水洗過程藻紅蛋白是否與淡黃色外觀的石花菜有關，並評估後續的發展以及是否會有其他處理方式可簡化傳統加工乾燥製程。
