Description

Abstract
學術發展上可建立高靜水壓加工技術輔助酵素萃取藍鯊魚皮發酵物並製備藍鯊魚皮發酵水解物,分析水解物對體外與體內調節血壓及膽固醇的效果,並鑑定其有效的胜肽序列與探討其作用機制。在社會上可作為預防醫學的保健食品並減少心血管疾病的罹患機率。在經濟上,利用藍鯊魚皮搭配乳酸菌發酵以及高靜水壓加工技術可以保留藍鯊魚皮之原料的營養外並提高活性胜肽的萃取率,從而開發成調節血壓血脂的藍鯊魚精,進一步提高藍鯊魚皮的商業經濟價值。
