dc.description.abstract本試驗將臺灣養殖的草蝦(Penaeus monodon)、斑節蝦(P.japonicus)、紅尾蝦(P.peni-cillatus)以及砂蝦(Metapenaeus ensis),在同一養殖條件下馴養,以比較不同蝦種之筋肉中,其可溶性抽出物成分的差異,獲得如下之結果:1.草蝦、砂蝦的glycine含量比斑節蝦、紅尾蝦爲多,但是,皆比天然蝦爲少。四種蝦的arginine則大致相同。紅尾蝦的proline含量非常高,約爲砂蝦的二倍,且比天然蝦爲多。斑節蝦的taurine含量,比其他三種蝦爲多,但較天然蝦爲少。2.斑節蝦的:TMAO含量高於其他三種蝦,而以砂蝦最少,約爲斑節蝦的三分之一。 Glycinebetaine的量以斑節蝦及砂蝦較多。Quaternary ammonium bases則以斑節蝦最多。3.在核酸及關連物質中以IMP及AMP爲主。其中斑節蝦的AMP含量高於其他三種蝦,但IMP之含量則最少。4.在無機成分中,K(superscript +),Na(superscript +),Cl(superscript -)的含量,四種蝦大致相同,但是PO(superscript 3-)4 則以紅尾蝦含量最多。5.此四種蝦的可溶性抽出物組成,雌雄之間並無明顯的差異。en_US
