dc.description.abstractCellulomonas fiavigena NTOU 1B was used as a hydrolyzer of shrimp headsand shells,comparing with pepsin(1,000 units/g sample)and Bacillus subtilis.C.flavigena NTOU 1B showed the highest yield of hydrolysate(63.1%)followedby B.subtilis(47.4%)and pepsin(44.9%).Flavor of hydrolysates produced bybacteria and pepsin was judged by sensory evaluation and profiles of aminoacids,fatty acids and nucleotides.Hydrolysate produced by C.flavigena NTOU1B was tasted the best.Flavor could be improved by growing Saccharomycesrouxii in the hydrolysate.When the hydrolyzing residue was used as aningredient of chicken feed,feed conversion ratio of the residue of shrimpheads and shells hydrolyzed by C.flavigena and fermented by S.rouxii wassignificantly lower than that of fish meal(p<0.05),but no difference comparingwith that of shrimp head powder(p>0.05).以產黄纖維單胞桿菌(Cellulomonas fiavigena)NTOU 1B株水解蝦頭及蝦殼,並與胃蛋白酶(1000單位/g試樣)及枯草菌比較。C.flavigena NTOU 1B之水解液的收率最高(63.1%),其次為枯草菌(47.4%)及胃蛋白酶(44.9%)。這些水解液的風味以官能品評及胺基酸、脂肪酸與核苷酸的成分評估時,以C.flavigena的水解液最佳。此水解液的風味可再經由醬油酵母的醱酵而改進。當水解後的殘渣作為小鷄飼料的一部分時,以添加C.flavigena水解並以醬油酵母醱酵後的殘渣之飼料的飼料轉換率比魚粉者為差(p<0.05),但與蝦頭粉者相比,並沒有差異(p>0.05)。en_US
