Abstract
本計畫探討當甲殼類水產品尚未達到可用肉眼判別其鮮度、品質劣變程度與保存方式時,若可藉由一個簡單的攜帶式光學儀器進行初步快篩判斷水產品的保存狀態與型式,將有助於現場食品安全與冷鏈管理之便利性會是一大提升。
