Abstract: 
以57%去乙醯化程度,分子量爲388,000道爾敦之幾丁聚醣配製成不同濃度的幾丁聚醣溶液,以了解剪切速率、溫度、離子强度、pH值對溶液流變性質之影響。結果顯示2%以上幾丁聚醣的溶液性質屬於非牛頓流體,溶液粘度隨溫度升高而降低,溶液中添加鹽會使粘度下降,此因相反離子作用使得分子鏈的構形變得較捲縮(compact)之緣故,而內生性粘度是隨pH值及離子强度增加而減少。The effect of shear rate,temperature,ionic strength,and pH on the rheological properties of chitosan(57% deacetylation 388,000 daltons)solutionswith different concentration were studied.The results showed:1)The Newtonian or non-Newtonian behaviors were dependent on the shear rate applied,molecular weight,and solute concentration;2)The apparent viscosity decreased with increasing solution temperature;3)Addition of salt led to areduction in apparent viscosity.The decrease was due to the compact effectof the molecule exerted by the counter ions;4)Intrinsic viscosity decreasedwith an increased in pH or ionic strength in solution.
