dc.description.abstract幾丁質俗稱甲殼素,為自然界含量僅次於纖維素之物質,分布甚廣,昆蟲與蝦蟹殼、魷魚鮹及真菌(黴菌及各種菇類)細胞壁中均含有幾丁質。幾丁質之分子量約為100~200萬,視其來源及其製造條件而定。若將幾丁質分子上之乙醯基部份或全部去除,即得到幾丁聚醣(又稱殼聚醣),幾丁聚醣之溶解性比幾丁質好,可溶於稀鹽酸及醋酸,而且因含有胺基,在酸性條件下帶正電荷,使其具有降血脂及抗菌等活性。由於幾丁質與幾丁聚醣均不溶於水,人們乃利用化學方法或酵素方法分解大分子,得到水溶性且有活性的寡醣。本篇報告主要介紹此等幾丁質類物質(幾丁質、幾丁聚醣與幾丁寡醣)在降血脂、增強免疫活性、抗腫瘤及抗菌等方面之功能,其次介紹其應用情形。en_US
